Now this is a very simple recipe so please forgive me. The only reason I’ve put this in is the conviction that the most simple things are the best! Now, there are so many variations of this recipe, I half expect you to reply back with your own favourite versions. Of course you can make these in a panini maker but my preferred method is the flame grill. You can also vary the bread that you use to get very different tastes. The bread used in this recipe is a favourite multi-seeded loaf from none other than Lidl…Like I said sometimes simplicity is the best…
You will need:
- 2 pieces of good bread
- 1 tablespoon of good unsalted butter (unless you’d like to use salted butter and omit the ground salt added later)
- Sliced cheese (I’ve used Emmental from Lidl)
- A handful of plum tomatoes (any type will do)
- A few slices of red onion
- Green chillies chopped into slices
- Sea salt in a grinder

When it is browned one one side, turn it over and butter the side that hasn’t been toasted yet.
